HOT n’ SPICY RECIPES

Here’s another one of my dearest darling Mom’s chicken recipes. It’s out of this world, delicious!!! Definitely try it out. Don’t let the number of ingredients intimidate you. You’ll be surprised how simple & just delicious it is! So here it is! My Darling Mom’s chicken recipe.

Chicken Gravy
My Darling Mom's Delicious Chicken Gravy!You’ll Need
2 lbs Chicken
3 Medium Onions Coarsely Chopped
1/4 Cup Unsweetened Shredded Coconut
3 Tbls Fennel Seeds
3 1/4 Cup Water (Divided Into Two Portions Of 1/4 Cup And 3 Cups)
3 Medium Tomatoes
1/2 Cup Fresh Coriander Leaves
1 Inch Ginger
5 Medium Garlic Cloves
2 Small Green Chillies (seeded if, you prefer less spicy)
3 Bay Leaves
1/2 Tsp Cardamom Pods
1/2 Tsp Cloves
1 Small Stick Of Cinnamon
2 Tbls Tomato Paste
2 Tsp Turmeric Powder
1 Tsp Red Chillie Powder
1 Tsp Garam Masala
1 Tsp Brown Sugar
5 Tbls Cashew Paste
1/2 Cup Heavy Cream
Salt To Taste
5 Tbls Oil

 

 

Let’s Get Started

In a non-stick pan, on medium to low heat, roast onions. Do not add any oil. When the onions turn a little brown and soft, add in the coconut and the fennel seeds. Roast till everything turns golden brown and the onions are cooked soft. Set aside.

In the meanwhile, in a blender, blend together, tomatoes, coriander leaves, ginger, garlic, green chillies to a fine and a smooth paste.

In a large pot, heat oil on low to medium heat. Add to it, bay leaves, cardamom pods and cloves. Stir once and immediately add the tomato coriander mixture that we just blended. Keep stirring often.

In the meanwhile, in the same blender, blend together the onion, coconut and fennel seeds mixture that we roasted earlier. Blend it to a fine and a smooth paste. Add 1/4 cup water to it and blend again to end up with a smooth, fine and a thick, but not too thick, paste.

Add this onion and coconut paste to the tomato mixture cooking in the pot.  Cook on low heat till the mixture starts leaving oil on sides, about 20 minutes. To it, add the tomato paste, turmeric powder, red chillie powder, brown sugar and cashew paste while stirring often. Cook for another 10 minutes stirring often on low heat.

Add chicken to it and cook uncovered on low till the chicken absorbs all the flavors. Then add 3 cups of water and salt to taste and cook covered on low heat, till the chicken is fully cooked, about 30 – 35 minutes.

Once the chicken is cooked add cream to it. Cook uncovered stirring often, for another 15 minutes on low heat.

Turn the heat off and sprinkle garam masala over it. Garnish with a sprinkle of chopped coriander.

And Voila, your delicious Hot n’ Spicy Chicken Gravy is ready to be enjoyed with Bread, Indian Chapati, or even on a bed of cooked fragrant basmati rice alongwith couple of lime wedges!
