One of kids’ (and grown ups’) favorite soups. A healthier version with the goodness of veggies and your little one will never know! So you’re happy and your picky eater’s happy, as well.
Chicken Noodle Soup
You’ll Need
1 Onion, Finely Chopped
3 Stalks Celery Including Leaves, Chopped
1 Cup Mini-Carrots, Chopped
3 Tbls Oil
2-3 Boneless Chicken Breasts
1 32 oz. Box Low Sodium Chicken Broth
8 oz. Spaghetti Noodles
Let’s Get StartedBring chicken to boil in water, just enough to cover the chicken, seasoned with salt. Cover and simmer until the chicken is cooked through.
Saute chopped vegetables in oil until soft. Once the sauted veggies are cooled, puree them in a blender. Keep aside.
Shred chicken into small bite sized pieces. Place the chicken pieces in the soup pot with broth from cooked chicken and the box of chicken broth. To it, add spaghetti noodles and sauteed vegetables.Cover and cook until noodles are done. Season to taste.
