A twist to your regular meatloaf. Just roll up your regular meatloaf around some spinach and feta cheese. It’s delicious a little spicy, not to mention comforting and satisfying.
Spicy Spinach and Feta Meatloaf Roll

You’ll Need
2 lbs Lean Ground Meat (A Mixture Of Pork, Veal and Beef)
3/4 Cup Seasoned Bread Crumbs
1 Egg
1/2 Cup Milk
2 Carrots, Grated
1 Onion, Grated
1 Tsp Salt
1 Tsp Pepper
2 Tsp Hot Pepper Sauce
1 Tsp Mixed Dried Herbs (Marjoram, Oregano, Basil, Thyme) Or Herbs Of Your Choice
1 Pkg. Frozen Spinach
2 Ounces Feta Cheese
2 Tbls Ketchup
1 Tbls Hot Sauce

2 Ounces Feta Cheese
2 Tbls Ketchup
1 Tbls Hot Sauce
Let’s Get Started
Preheat oven to 350° F.
In a large mixing bowl, mix ground meats, bread crumbs, egg, milk, grated carrots, grated onions, salt, pepper, hot pepper sauce, mixed dried herbs all together. Mix well. Keep aside.
Thaw frozen spinach. Squeeze out all the water from spinach till fairly dry. Finely chop and keep aside.
Cover a baking sheet with wax paper. Place the meatloaf mixture onto the wax paper and shape into a fairly neat approximately 9 inches by 12 inches rectangle. Even out the surface gently. On the meatloaf surface, spread the finely chopped spinach evenly. Over the spinach, distribute evenly crumbled feta cheese.
Now, to roll the meatloaf. Start from the short side of the meatloaf. Using the wax paper, gently start rolling up the meat into a log shape, as if you were rolling a jelly roll. Press and shut the ends with moistened fingers. Just pat and seal up any cracks.
Once the meat is shaped and sealed shut, carefully remove the wax paper from the bottom.
In a small bowl mix ketchup and 1 tablespoon hot sauce and spread over the meatloaf. Bake the meatloaf for about 50 minutes, or until the meatloaf is cooked through.
Once cooked, let the meatloaf rest outside the oven for about 10 minutes in order to firm up. This helps in easy slicing of the meatloaf.
(You can also roast some potatoes or any of your favorite veggies along with the meatloaf.)
Serve up thick slices of your meatloaf along with a side of roast veggies and some delicious mashed potatoes.
