A delicious and easy Mexican breakfast recipe.

Breakfast Tacos

Mexican Breakfast Tacos

You’ll Need
6 ounces Chorizo Sausage
8 Corn Tortillas (6 Inch)
6 Eggs
1/4 Cup Milk
1/2 Tsp Salt
1/2 Tsp Pepper
1 Cup Monterey Jack Cheese, Shredded
Dash Of Hot Sauce
1/2 Cup Salsa
Sour Cream For Garnish
Chives, Finely Chopped, For Garnish
1 Cup Mozzarella Cheese, Shredded, For Garnish

 

Let’s Get Started

In a skillet, over medium-high heat, crumble sausage and cook until brown. Set aside.

Heat one skillet over medium heat.
Heat another skillet over high heat. This skillet is for warming the tortillas.

Whisk together eggs, milk, salt and pepper in a bowl. Spray the skillet over medium heat with cooking oil. Pour in the eggs mixture and cook stirring often until firm. Now, to the eggs, add the crumbled browned sausage. Keep cooking and stirring until firm.

While your eggs and sausage are cooking, warm the tortillas on the other skillet over high heat for about 45 seconds per side. This way your tortillas will warm and crispy on the edges but still be pliable.

On each tortilla, while it’s still hot, sprinkle a little shredded cheese and top with some scrambled egg and sausage mixture. Add a dash of hot sauce and salsa.

Serve these yummy breakfast tacos topped with a little bit of shredded mozzarella cheese, a generous dollop of sour cream and a sprinkle of finely chopped chives.
