Description

Chervil is a light green lacy fernlike leaf that comes from a small low-growing annual, Anthriscus cerefolium, which is part of the parsley family. It gets its name from the Latin chaerophyllum which means "festive herb" or "herb of joy." Chervil is an aromatic and a sweet herb. Even though it is a member of the Parsley family, the flavor is more distinctive with a trace of anise.

Origin

Chervil is native to southern Russia. It was introduced to France and England by the Romans more than 2,000 years ago. Only recently has it been cutivated and used in the United States.

Use

Chervil is used in French and European cuisine and the spice blends of bouquet garni and fines herbes. You can also stir Chervil leaves into eggs dishes such as omelets. Chervil is useful for adding color and flavor to creamy dressings for pasta and potato salads. It's used in seafood, grilled meats, poultry, vegetables and soups.
