Description
Parsley is leaf of Petroselinum crispum, a hardy biennial herb in the parsley family. This is probably the most well-known and used herb in the United States. Parsley leaves are bright to moderately dark green and are uniform. It's an excellent breath freshener. It's rich in vitamins A and C, and contains iron, iodine and copper. Parlsey has a light fresh, clean vegetative scent and flavor.

Use
Parsley is wonderful as a garnish and adds a wonderful visual appeal to the foods. It's used in stews, soups, egg dishes, stocks. Parsley is popular in Middle Eastern cuisine and the spice blends of fines herbes, bouquet garni, and pestos. Add it directly to cooked foods, liquids, melted butter and salad dressings for a light spicy touch.
