Description

Rosemary is a herb that is a member of the mint family. It's a small evergreen shrub, botanically known as, Rosmarinus Officinalis. The Rosemary plant grows about 2 to 3 feet tall and is very hardy as it grows under harsh mountainous conditions. The leaves are about 1 inch long, resembling curved pine needles. It's normally hand harvested. Rosemary has a sweet and fresh flavor and tealike aroma. It also has a distinctive pine-woody aroma.

Origin

Rosemary is widely produced in France, Spain and Portugal. It is native to the Mediterranean. Rosemary was used medicinally and as a condiment for salted meats in the Middle Ages. In Europe, wedding parties burned Rosemary as incense. Also, Judges burned it for protection against illness brought in by prisoners.

Use

Rosemary is found in bouquet garni and herbes de Provence. Rosemary blends quite well with garlic to go as seasoning for lamb and meat dishes and marinades. It's also good in light fish dishes. You can melt butter with rosemary to dress steamed potatoes. This herb is often used in Mediterranean cuisines.
